Paleo Everything Cookies

These breakfast cookies are easy to make and so yummy. They are paleo, gluten free, and dairy free.

Gluten Free and Dairy Free Cookies

One of my kid's and mine favorite activities to do together is to bake cookies. They love the whole process: making a mess, taste tasting each ingredient, mixing, and watching it bake in the oven. They also can binge eat what we make with the best of them.

A few tricks I use when making cookies with my kids:

  • I have an extra set of measuring spoons and cups that I let them play with while we bake. I got them at the dollar store.
  • I have a learning tower that they can easily and safely stand in. Linked below.
  • I make the cookies a lot smaller than I would normally so they feel like they are getting more.
  • I cut the chocolate chips in the recipe in half. Then I let them put a few on top of each cookie. This cuts down on the sugar and is fun for them.

Ultimately, I wanted a cookie that I didn't feel bad about my kids eating (at any time of the day). That is where this recipe was born from.

Cookies that met the sugar need with none of the guilt. These healthy babies are yummy and gluten and dairy free.

What is an Everything Cookie?

I think my grandmother used to make some that where called, everything but the kitchen sink. Before I really tried wine this was also a name of an $8 bottle of wine... I loved. (Glad I grew out of that phase.) So lets talk through how I made this cookie happen without eggs, butter or flour.

Applesauce is the egg.  I am in FULL support of kids eating eggs. Read about why here.  However, getting some extra fiber and fruit into your kiddos is also awesome. Believe it or not the avocado is the butter in this recipe, and it totally works. I love almond "flour."  Even if you aren't on a gluten free diet this is a great change to make. It is the exact same thing as eating a handful of almonds. I definitely count this as a  win with my kids!

Let's talk oats for a second. I don't do a ton of oats in mine or my kid's diet. The main reason is, it doesn't seem to sit well with any of our stomachs. It is however full of some good nutrients. That is why I included it in this recipe. This amount is small enough that it doesn't seem to bother us.

Gluten free, dairy free, and paleo cookies with everything thrown in there.

This recipe is: Paleo, gluten free, egg free, and dairy free.

Serving size: 16 cookies

Dairy Free Breakfast Cookies

  • 1 ripe banana
  • 1/2 cup unsweetened applesauce
  • 1/2 an avocado
  • 1/2 cup almond butter
  • 1 cup almond flour
  • 1/2 cup rolled oats
  • 1/2 tsp salt
  • 1 tsp vanilla
  • 1 tsp baking soda
  • 1/2 of add-ins**

How to Make it

  1. Preheat oven for 350. Line a cookie sheet with parchment paper.
  2. In a stand mixer combine the banana, applesauce, avocado, and almond butter. In my kitchen aid I just put the whole banana and avocado, and let it combine until almost whipped.
  3. Add in the remaining ingredients and combine.
  4. Spoon out onto lined cookie sheet. Use another piece of parchment paper on top of the rounds. Then take a cup (or something flat on the bottom) and flatten out each round.
  5. Bake in oven for 12 minutes.

  • Add-ins - this can be whatever your family loves and any combination of it (just not to exceed a half a cup). I use things like: chocolate chips (love this brand), shredded coconut, raisins, all chopped nuts, and any dried chopped fruit. I have also used small fresh blueberries.
