Chicken Thighs with Dairy Free "Cheesy" Broccoli
It is summer! I love summer! Thanks to Frozen I will never say that phrase without thinking of that snowman. This is basically meaning lots and lots of fun evening activities... swimming, playing with the chickens, walks, and learning to ride a bike. Ultimately, this translates to even less time to make dinner. I am not complaining, but simple has taken on a new meaning, even to me!
Quick and easy dinners is becoming pretty much the only thing I am willing to make these days. Can I get an amen? I honestly don't know the last time I spent awhile making some elaborate dinner. This recipe is no exception. It is a simple sheet pan dinner that is something totally new!
Okay, so how do we get broccoli that tastes like it is covered in cheese, but is actually dairy free? Nutritional yeast! I have been using it for awhile now and love it. One of my favorite places to use it is on some oven popped, coconut oil popcorn!
What is nutritional yeast? All it is... deactivated yeast. These flakes have a nutty or even creamy texture when used. This "condiment" has a ton of healthy benefits too. It is full of vitamins and is an immune booster, antiviral and antibacterial!

Sheet Pan Dinner Recipe
2 heads broccoli
2 T coconut oil
1/4 cup nutritional yeast
1/4 tsp salt
1/4 tsp pepper
1 - 2 pounds chicken thighs
2 T avocado oil
1 tsp salt
1 tsp garlic powder
1 tsp onion powder
1/2 tsp pepper
How to Make it
Preheat oven to 400 degrees. Line a sheet pan with parchment paper. Wash and cut broccoli into bite sized pieces.
Put broccoli into a bowl. Combine coconut oil, yeast, salt and pepper.
Spread broccoli mixture out on one side of the pan.
Combine the avocado oil, garlic, onion, salt and pepper in a bowl. Tip: use the same bowl for less dishes.
Place the chicken thighs, skin side up, on the other side of the pan. Pour the oil mixture on top of each thigh. Rub into skin.
Put into oven. Bake for 25 minutes. Pull out of oven and put the broccoli aside. Put back into the oven and bake for 10 more minutes.
