Dark Chocolate and Cashew

Chocolate... I mean can I get an amen! Chocolate is heaven sent, especially when I am hiding in the closet trying to steal half a second (literally) to myself.  

Finding quality chocolate that doesn't break the bank, have dairy, and all kinds of fillers was really proving to be a problem for me. Introduce me determined (for very selfish reasons) to make a dark chocolate recipe that is to totally die for.  I can honestly say I didn't hate testing this recipe... over and over. Mission accomplished. 

So moms this for you... just you. You don't have to share it. You can hide it. You eat it in those quite moments during naps or heck first thing in the morning before the kids wake up.  Make a cup of tea, light a candle, and sit down enjoy yourself. 

Here is how I make it look pretty:

This is the mold that I used to make the bar of chocolate in the photos. It is a great product! Makes the whole thing simple and super pretty of course. 

Don't have a mold? If you have any silicone molds (cupcake, etc) you can use that! You can also use your 8x8 or 9x9 brownie pan lined with parchment paper. 

This recipe is: vegan, paleo, dairy free and gluten free. 


  • 1/2 cup coconut oil

  • 1/2 cup cashew butter

  • 1/4 cup honey

  • 1 cup cacao powder

  • 1/4 tsp salt

How to Make it:

  1. Put the coconut oil, cashew butter, and honey in a sauce pan on medium/low heat. Stir constantly and do not let it come to a boil.

  2. Once all ingredients are melted and well combined remove from heat.

  3. Add the cacao and salt. Whisk together till well combined.

  4. Transfer to mold and put into the fridge. It should only take about an hour to become hard.

The chocolate will melt faster than what you buy at the store (because their are no fillers). So, store it in the fridge (the back, of course, so no one else will take it).
