We just got back from the beach this weekend. So... I am channeling all things summer. I am so ready for the warm weather, the sun shine, and pool time. I may also point out that the kids are as well. So here I am making this yummy lemonade recipe to make myself feel more "summery."
The coconut water in this recipe adds some great flavor, but it also makes this drink super hydrating for summer. Feel good about drinking this after a long day at the pool! Coconut water has lots of potassium, which is an electrolyte. Did you know that maintaining you electrolyte levels can reduce stress? With the kids home for the summer... I feel like this is a must.
This recipe is: Paleo, dairy free, and vegan.
Yields: 1 quart
- 3 cups coconut water
- 1 cup lemon juice
- 1/4 cup honey
- 1/4 water
How to Make it:
- Put water and honey into a small saucepan on medium heat. Warm until honey is melted. Set aside.
- Juice the lemons.
- Combine all the ingredients in a pitcher. Chill or put on ice, then serve.
To make the garnish. Just slice the lemon and set them in some shredded (unsweetened) coconut.
