Cauliflower Fried Rice

Straight up dinner doesn't get any easier in my opinion. It just doesn't. My whole family loves this meal. It totally meets all the comfort food feels, with none of the guilt. The first time I started working on this recipe me and my husband just laughed as my son scarfed down all these vegetables. 

For this dinner you don't have to cut up any vegetables, and you only have to wash one pan!

This recipe is: paleo, Whole30, gluten free, dairy free, one pan, and simple.


  • 2-4 chicken breasts*
  • 1 bag of cauliflower rice
  • 1 bunch of green onions (optional)
  • 4 T of coconut oil (divided)*
  • 1 bag of frozen vegetables*
  • 1/4  cup of soy sauce or coconut aminos (link below) 
  • 2 eggs (optional)

How to Make it:

  1. Cut your raw chicken into bite sized pieces. If you are going to use the optional green onions chop the white bottoms of the onions and include in pan. Save the green tops to sprinkle on top of the finished dish.  Put into a pan with half the coconut oil (2 tablespoons) and sauté till cooked through. 
  2. Once meat is cooked through, put aside on a plate. Add the remaining 2 tablespoons of oil to the pan.  Then put in the cauliflower rice and as much of the frozen vegetables as desired. Cook on medium/high for 5 minutes.  
  3. Add in the soy sauce and chicken. Combine and cook for two more minutes. If you would like to add in the eggs now is the time. Make a hole in the pan, so that you can see the bottom of your skillet. Crack in both eggs. Proceed to cook them like a scrambled egg in the space you created. Once almost cooked though, just slightly runny, combine with everything else in the skillet. 
  4. Then serve. 


  • Get however many chicken breasts your family normally eats at dinner. Quick tip - get chicken breasts already cut into pieces, or just ask the butcher to do it for you. 
  • You can really use any oil in this dish - coconut, olive, or even butter. Just go with what works for you and your family.
  • For the frozen vegetables I use a carrot, green bean, and corn blend. I have also just used frozen peas.  Just throw in whatever you have.
