Valentine’s Date Without Leaving the House

Somewhere along the way me and my man just decided that going out of the house on Valentines wasn’t worth. Almost a decaade ago Morgan made me Valentine’s dinner in my little apartment. I will never forget it… salmon with a dill sauce and a bag of frozen risotto, with a vase of tulips. It was so sweet that he figured out how to make me dinner. Here we are now fighting the struggle to get a sitter on a busy date night, so staying in still jsut seems like the best option.

Keeping it Simple, but Sepcial

Now we have kids and bed time and all the things. Valentines has gotten alittle more complicated and alittle less special. Trying to do something romantic on this night can be so much effort, that by the time you sit down to eat you are just spent. That is why we usually do some kind of pizza night in for Valentines. When we asked you guys on Instagram you pretty much all felt the same way!

Pizza Cups and Caesar Salad

So here it is… pizza cups with a real deal caesat salad dressing. What guy doesn’t love a good pizza. These pizza cups are super easy to make, and just a fun change up on the normal take on pizza. What girl doesn’t love a good ole fancy caesar slaad. Everyone’s happy. Yes this caesar salad dressing recipe has anchovys in it, but give it a try. I don’t know if you knew this, but that is typically what you are eating at a fancy resturant.

Notes on the Recipe

You can make this whole meal ahead of time. Just warm it up and assemble the salad to serve. I make the pizza cups, let them cool, just leave them in the muffin tin. Then I cover the muffin tin with press and seal, and put in the fridge until it is time to serve.

This is a fun different way to serve the salad. Just put the salad dressing in the bottom of a wide mouthed mason jar. Then stick in your romaine leaves. Think of it like a chip (romaine) and dip (caeasr dressing) situation.

This is a perfect dinner on a pallet on the floor, in front of the fire, or on the couch with a good Rom Com movie. So cuddle up and enjoy!

Pizza Cups and Cesear Salad

Ingredients:

Pizza Cups

  • 1 1/4 cup all purpose gluten free flour, plus 1/4 cup for dusting

  • 1/3 cup, 1 T of almond milk

  • 3 T olive oil

  • 1 tsp baking powder

  • 1/4 tsp salt

  • 1 can tomato sauce

  • Pizza Toppings

Caesar Salad

  • 2 pieces white bread

  • 2 T. olive oIl

  • 1 garlic clove, minced

  • 1 gg yolk

  • 1 T dijon mustard

  • 1/3 cup olive oil

  • 3 garlic cloves

  • 3 anchovy filets

  • 1 tsp black pepper

  • Juice of 1 lemon

  • Romaine lettuce

  • Parmesan cheese (optional)

How to Make It:

  1. Preheat the oven to 350.

  2. Lets start with the pizza crust. Combine all the pizza crust ingredients (minus the toppings), in a kitchen mixer with the dough attachement. The dough will be sticky, use the flour for dusting.

  3. Dust the counter and kneed the dough till well combined. If it is not holding together add more milk, one tablespoon at a time. Roll out to about a 1/4 an inch thick. Cut into six squares.

  4. Grease a muffin tin. Place the dough into each container. If the dough tears, then it might be rolled to thin.

  5. Then put in the toppings. I think the easiest way to do it is to put one large pepperoni into each tin first. Then add one tablespoon of pizza sauce, then cheese.

  6. Bake for 15 to 20 minutes.

Cesar Salad

  1. Cut the bread into crouton sized pieces. Top with olive oil, garlic, and salt. Put onto a cookie sheet and put in tthe oven with the pizza. Leave in until cripsy, 5-7 minutes.

  2. Get a glass jar with a wide mouth. Add all the dressing ingredients. Get your immerstion blender. Hold over the egg yolk in the bottom of the jar. Turn to high, blend and slowly pull it up.

Asseble the salad and enjoy!!

If you don’t have an immersion blender: FInely mince the garlic. You can use anchovy paste instead of anchovy filets. Then use a whisk to whisk together everything, but the oil. Then slowly pour in the oil while whisking.
