St. Patrick's Day: Paleo Edition

I mean who knows what St. Patrick’s Day is really even about, but I love celebrating things with my kids! However, this holiday in particular is full of lots of highly toxic dyes… queue green frosting, skittles, and rainbow goldfish. No thank you. Confused on why I say this?  Check out this blog article.

I thought I would share with you some of the healthy and fun traditions my “new” family has around this holiday. Oh and I do know what Saint Patrick’s Day is about, I googled it.  This article summarizes it nicely. My kids are to little to understand this so the day will be all about the color green, things that grow, and the rainbow!

All these recipes are healthy, kid friendly and TONS of fun.

For Breakfast:

I will be making green eggs and ham. I will also be busting out the good ole classic to read to my little one while he eats.

Green Eggs and Ham Recipe:

Ingredients
1 cup of chopped spinach and/or kale
4 eggs
1 package Applegate ham lunchmeat (you will only use half)
2 T. of butter

How to Do it:

  1. Crack eggs in bowl and beat. Chop up spinach. Cut ham into bite sized pieces.

  2. Melt butter in the pan.

  3. Put ham in pan with butter. Cook till warm, 1 - 2 minutes.

  4. Then add eggs and spinach. Cook like you would a scramble egg. Once spinach is wilted and egg is cooked through serve.

Tip: Chop the spinach as finely as you can. This will help it be less suspicious to your kids.

For a Snack:

I will be making some wonderful green muffins with the little guy. These Green Monster Muffins have a ton of spinach in them to give them their green color. The cool thing is you can’t even taste it after they are baked. These muffins resemble more of a bread than a muffin. They are not very sweet, as they are sweetened with apples.

Additionally, I will make chips out of these tortillas. They are super healthy for your little one and they will have no idea. Want to really have fun with it? Use these Saint Patrick's Day cookie cutters to make your chips.

How to Make it:

  1. Preheat oven to 350.

  2. Slice the tortillas in triangles or cut them out in shapes.

  3. Paint them with olive oil.

  4. Lay them on a pan and put in the oven.

  5. Cook till crisp. Around 15 minutes.

Don’t want to go to the trouble - try these green kale chips. My local Whole Foods carries them.

For Dinner:

Drum roll please… rainbow pizza. I will be cutting up all the veggies in advance, but letting my two year old make the rainbow on top of the pizza.

Here are a few of my favorite gluten free and allergy friendly pizza crusts:

Fruits and Vegetable Options:

  • Red - tomato, red bell pepper
  • Orange - orange bell pepper, carrots, sweet potato, butternut squash
  • Yellow - yellow squash, yellow bell peppers
  • Green - green bell peppers, green onion (chives), kale, spinach
  • Blue/Purple -  blueberries, eggplant, carrots, potatoes, purple onion, cabbage

For the Day’s Activities:

There are so many fun rainbow activities out there. However, I don’t want to bite off more than I can chew.  We will just be using these Saint Patrick Day’s photo booth props. Thanks to the dating divas this is just a free printable you tape to a stick. I can handle that. I will also be saving them to reuse next year.
Be sure and wear your green… even though I don’t think I will be teaching my two year old how to pinch people who aren’t. That message might bet lost in translation.
