Snack Ideas for Spring

Spring is here and I am pumped about it, so is our little backyard chicken flock. I know I don’t have to explain to ya’ll how nice it is to be able to get outside with the kids in the afternoons. We have been playing in the culdesac every night after dinner, and man does it ever change this tired mom’s evening. Needless to say, we are celebrating and doing all things spring.

Snacktivity for Easter

If you have been with us for awhile you know how we feel about getting kids in the kitchen. You also know we love a good snacktivity. A snacktivity is basically an activity you eat, and what kid wouldn’t love that. My kids are two and four, and we had a blast doing this recipe together. We got messy and sticky, but cleanup was easy. My little ones set on the floor staring into the oven window as these little nests cooked.

Making connections for your little ones is such a fun thing to watch. The whole process, from measuring to mixing to baking was full of connections for them. The coolest connection was when my son saw a nest in a tree a few days later and said, “mom look we made those”. My hope is this recipe provides a fun experience for you and your kids.

Spring Coconut Macaron Nests Recipe

Ingredients

  • 1 1/4 cup shredded unsweetened coconut (I buy)

  • 2 egg whites

  • 2 T honey

How to Make it:

  1. Preheat the oven to 350 degrees.

  2. Grease a mini muffin tin. Grease this well because they will be very sticky, and can be hard to remove after baking.

  3. Mix all ingredients in a bowl. They need to be very well combined, consider letting your kids do this with their hands.

  4. Scoop about one tablespoon into each muffin. My four year old loved doing this part. Use your thumb to press down in the middle and form little nests.

  5. Bake for ten minutes or until crispy.

  6. Remove from muffin tin. It is easiest if you take a knife and go around the edges first. Put in the “eggs.“ We use either Little Secrets dye free candies or blueberries.
