No Bake Cookies: Brain Food

These are a play on those wonderful no-bake oatmeal, chocolate, peanut butter cookies... that I know you love. These cookies were my go to comfort food in my college days, when I could eat a ton of these and it didn’t matter. This recipe is much more healthy for you, and packed with all kinds of good fats. 

If you have little ones throw them on the counter and let them help you! This cookies don’t take much skill to get on the wax paper so let them “help.” I love this time with my little one year old., you can tell he does too.

Better Choices in Healthy Fat

This is something you can feel good about feeding to your kids. Why? Their brains are completely developed by age 7, and they need all kinds of fats to make that happen. I feel like I say it all the time, but here is one more fat is good for your kiddos.  These cookies have:

  • Coconut oil - saturated fat, coconut oil is the only plant source available of saturated fat. This is what is typically found in meat.

  • Flax seeds - full of omega-3 fat in the form of alpha-linolenic acid. This is a more rare fat that our bodies definitely need.

  • Walnuts - monounsaturated fats and an excellent source of those hard to find omega-3 fatty acids.

If you child is under the age of 7 and over the age of 1 .... these are perfect for them. If they are older than the age of 7 these are great for any time they are studying for a test or if they are being overexerted at school.  Same goes for you... this brain food is exactly what a spread thin mom needs. 

The fat in these "cookies" also helps level your blood sugar. Eating the sugar in these cookies along with the fat keeps from creating the typical "crash" after eating sugar alone.

Dye Free Candy

A food dye is exactly what it sounds like, a dye added to food to make it look a certain way. When I think of food dye the first thing that pops in my mind is M&Ms. I love M&Ms and I love decorating baking with them, but just don’t like the impact they have on my body. That is why I love these beauties, Little Secrets!

Why does avoiding food dye even matter? The most studied effect is hyperactivity. Some of these studies link food dye back to reactions being caused in the brain.  This article gives more information on how food dyes affect kiddos behavior. Food dyes have also be linked to cancer and ADHD. This article has more information on specific symptoms caused by specific colored dyes.

These Little Secrets chocolate candies are one of my favorites! They are so yummy, and I totally trust the ingredients.

no bake paleo cookies

This recipe is: refined sugar free, paleo, dairy free, and gluten free.

No Bake Gluten Free Cookies

Ingredients:

  • 3 T. cacoa powder

  • 1/4 cup milk (whatever variety works for your diet needs)

  • 1/4 cup honey *

  • 1/2 cup coconut oil

  • 1/2 cup almond butter

  • 1 T. vanilla extract

  • 1/8 tsp. sea salt

  • 2 cups rolled oats

  • 1/2 cup chopped walnuts

  • 2 T. ground flax

Hot to Make it:

  1. Put the first five ingredients in a pot over medium heat on the stove top. Stir. 

  2. Meanwhile, in a bowl combine the salt, rolled oats, walnuts and flax seeds. 

  3. Do not let the ingredients in the pot come to a boil. Stir until combined and melted. 

  4. Remove pot off heat and add vanilla. Then pour over the rolled oats. Stir till combined. 

  5. Scoop the mixture onto wax paper, cool in the fridge, then serve. Store in the fridge. 

Notes on the Recipe:

  • These cookies are not super sweet, they only have a 1/4 cup of honey in them.

  • If you have a nut allergy at your school I have made them with sunbutter (sunflower seed nut butter) and it worked great!

  • If you want to make them a little less sweet you can use maple syrup.
