Honey Walnut Salmon

Fish is hard. It is hard to cook right, hard to get kids to eat, and honestly hard to make taste good (my opinion here). This recipe is pretty much full proof on all accounts. It only takes one pan and very little attention. 

I have posted before about how important both the fat in fish and walnuts are for children's brain development. When my kid eats this I am like high five-ing myself, and you totally should as well! As my kids get older I am going to make this meal a pre-test tradition in our house. This way I get to make an easy dinner, and they get all kinds of brain food for their test. 

A note on salmon, you know I had too. Honestly, wild caught salmon is the only way to go. This is one area I would advise paying more. Okay, we are just going to skip over all the chemicals, dyes, and anitbiotics in farmed salmon and jump to the fat content. Think about it... salmon is that fish that works so hard to swim against the stream (i know you have seen the videos). Farm salmon just swims its' whole life in a cage. This makes the fat and muscle content totally different. Farmed salmon has more calories and the bad fat (saturated). So, when you are buying just ask your fish counter if they have wild caught salmon. If they say no go check over in the freezer section. 

This recipe is: Paleo, gluten free, dairy free, paleo, AIP friendly, 1 pan meal, sheet pan dinner, and kid friendly.

Ingredients:

  • 1 cup whole walnuts

  • 2 T honey

  • 2 T dijon mustard

  • 1 T olive oil

  • 2-4 fish fillets (about 1 pound)

  • 2 bunches of broccolini

  • Lemon juice

  • Garlic clove

How to Make it:

  1. Preheat oven to 375. Finely chop up walnuts. Rinse off broccolini.

  2. Combine the first four ingredients.

  3. Set the fish on a pan lined with parchment paper. If the salmon still has skin put the skin side down on the pan. Then take the walnut mixture and press on top of each fillet.

  4. Lay broccolini on the pan drizzle with olive oil, squeeze lemon juice, and top with salt and pepper.

  5. Use your hand to massage the olive oil and lemon juice into the broccolini. Chop the garlic clove and sprinkle on top.*

  6. Put into oven and bake 15 or 20 minutes. Once done use a fork to separate the skin from the salmon and serve.*

Notes:

  • If you want to be lazy just sprinkle garlic powder on top. Fresh garlic will take to another level though.

  • You can totally eat the skin of wild caught salmon, be daring and give it a try! I wouldn't recommend trying this with young kids.

  • If you have kids that you think might be picky about this dinner, throw on a pot of brown rice to serve under the fish.

  • A good substitute for the broccolini is asparagus, follow the same steps.
