The first time I ever tried this recipe out I was so pumped because I knew you guys would love it. It is basically the most simple dinner ever and it is so yummy! Honestly, I am not a huge hummus fan. However in this recipe it almost tastes like a breading on the chicken and vegetables. Fill free to change it up with different hummus flavors and vegetables!

This recipe is: 1 pan, healthy, sheet pan, gluten free, dairy free, and egg free.
2 heads broccoli
1 package cubed butternut squash
1 package garlic hummus
Olive oil drizzle
Salt and pepper
1 pound of chicken breast tenders*
How to Make it:
Preheat the oven to 400.
Cut up the broccoli into bite sized pieces and put into a bowl with the butternut squash. I buy the already cut up butternut squash at the store, huge time saver.
Combine half the garlic hummus, a pinch of salt and pepper, and a drizzle of olive oil. Set aside.
Line a cookie sheet with parchment paper. Set the chicken tenders in the middle of the pan. Surround with the vegetables.
Take the remaining hummus and spread on top of the chicken. Put into the oven to bake for 20 minutes.
The "chicken breast tenders" are just chicken breasts cut into smaller pieces, similar to that of a fried chicken tender. These thinner pieces of meat make for faster cooking and easier serving to children!
