Epic Food and Beer Pairing Party

Oh ya'll I am super pumped to share this with you, and just in time for the Super Bowl!  My husband is a craft beer lover, and this is what I did for his birthday! I have done this for him a few times now, and it is so much fun! Well for him and his friends because I don't really drink beer. The things we do for love.

Basically, every course has a beer pairing designed to enhance the flavor and compliment the food. Craft beers can be so unique and finding the perfect pairing can really make everything taste better... just like wine!

No I am not any kind of professional on this. I did however get lots of help from people who are professionals. (Thanks Joe!) Yes, there are professional beer people, yes it sounds awesome and no it is not lucrative. 

Appetizer

Food: Green Chili Plantain Nachos
Beer: Beerito by Oskar Blues Brewery
This uncanny named beer rolled up the rulebook and took a blowtorch to it. It is a light bodied, amber Mexican lager. With a thick, cream and incredibly smooth mouthfeel, with flavors of walnut, toasted bread, plum, honey, and cocoa.

Ingredients:

  • 2 bags Terra plantain chips
  • 2 cans diced green chills
  • 1 bunch green onions
  • 1 T coconut oil
  • 1 1/2 cup shredded oaxaco, asadro, or queso quesadilla cheese
  • Guacamole and cilantro for serving

How to Make it:

  1. Preheat oven to 350.
  2. Cut up the green onions. Use the white part of the onion, set aside the green tops. On the stovetop cook the coconut oil, green chilis and green onions on medium/high heat. Once onions are cooked set aside. 
  3. Lay the plantain chips out in a pan. Top with the green chili mixture. Then top with cheese. 
  4. Bake until cheese is melted, 5- 7 minutes. Watch it closely so as not to burn the cheese. 
  5. Top the nachos with cilantro and the green onion tops. Serve with guacamole for dipping.

This limited release Saison Ale was made with the goal of enjoying the national food of Texas… tacos!

For the Barbacoa I made this recipe. It is done in a crockpot so it made hosting super easy because I got to make it ahead of time. 

I used these wonderful grain free tortillas, by Siete.

Dessert

Food: Red Velvet Cake with a Buttercream Icing. 

Beer Pairing: Imperial Java Stout by Sante Fe Brewing Co
This Imperial Java Stout is like having an after dinner cup of coffee. It uses extra generous quantities of barley malt, and has a body as full as chocolate bread pudding. The coffee beans are locally roasted in Santa Fe by the O-hori’s Coffee House.  Don’t worry I got the “After Noon” one.

I just got these yummy cupcakes from a local bakery that does gluten free cupcakes. Keep things simple when hosting a party!
