Dark Chocolate Energy Balls
Lately, I have been going to what feels like a lot of playgroups. It is summer so I guess because everyone is out of school more just seems to be happening. Ya'll, I am just not a playgroup mom.
Don't get me wrong I love hanging out with other moms. I just don't love hanging out with tons of kids. Basically my nerves are shot for the rest of the day.
Anyways, moms have been bringing these energy balls to playgroup a ton. It is a super easy and yummy thing to make. When I start looking at the ingredients they have powdered milk, refined sugar, and peanut butter.
That is where the idea for this was born. A healthy, nutrient dense, superfood energy ball that is just straight up yummy. They are super easy to make... just combine the ingredients and roll into balls.
Cacao (powder and nibs) is the superfood component of this recipe. It is also what gives it the rich dark chocolate flavor.
Cacao has a ton of health benefits. Some of them being: boosts immunity, antioxidants, increases serotonin (happy hormone), and fights tooth decay. I mean who wouldn't want to eat that!
Cacao nibs are cut up cacao beans that have been peeled and roasted. You can just think of them as nature's chocolate chips. They add a little crunch in this recipe.
This recipe is: dairy free, gluten free, and Paleo.
Energy Ball Recipe
- 1 cup oatmeal
- 1/2 cup almond butter
- 2/3 cup unsweetened shredded coconut (fine)
- 1/3 cup honey
- 1/4 cup cacao nibs
- 1/4 cup cacao powder
- 1/2 cup flax meal
- 1 T almond milk
- 1 T chia seeds
- 1 tsp vanilla
- 1/4 tsp salt
How to Make it
- Combine all the ingredients well.
- Use a spoon and scoop into hands. Then roll into a ball. Note: If you are having trouble rolling them put them in the fridge for a few minutes and revisit.
- Store in fridge.
