Gluten Free Breakfast Treat

I am always looking for a good breakfast treat, that is somewhat healthy. I feel like so many of the special breakfast items are just full of sugar. Like, packed full.

I love cinamon rolls and pull apart bread. Those from scratch were definitely a part of my childhood. However, I really don’t want to spend Christmas morning, or the day before making a ton of baked goods. A cinnamon roll “bake“ does make the whoel processes a lot more simple. This bread is full of flavor, but the sweetness level is much lower than typical cinnamon rolls.

Christmas morning is one of the best mornings of the year. I can’t really put my finger on why… maybe it is the magic my kids seem to see or maybe it is just the joy of celebrating God’s greatest gift to us. Either way, I could get weepy just writing about it. I wanted to create something that felt special for us to have on Christmas morning, but that wasn’t totally unhealthy.

Whipping up the dough and the glaze are pretty easy to do before the kiddos wake up in the morning. Then it can bake while we open presents, and the whole house smells incredible.

Gluten Free, Dairy Free Cnnamon Roll Bake

Ingredients:

  • 2 cups gluten free flour

  • 1/8 tsp salt

  • 1/2 cup coconut sugar

  • 3 tsp baking powder

  • 1 cup coonut milk

  • 2 eggs

  • 2 tsp vanilla

  • 1/4 cup coconut oil, melted

  • 1 tsp cinnamon

Glaze Topping:

  • 1 cup coconut sugar

  • 3 T coocnut oil melted

  • 1/2 cup coconut milk

  • 3 T honey

  • 1 T arrowroot powder

  • 1/4 tsp sea salt

  • 1 T cinnamon

How to Make it:

  1. Preheat oven to 350 degrees.

  2. Mix together the dry ingredients. Then mix together the wet ingredients. Combine and mix.

  3. In another bowl mix together the glaze topping using an electric mixer with a whisk attachment.

  4. Grease a cast iron with coconut oil. Put in the dough. Top with the glaze using a knife to swirl it around.

  5. Bake for 30 minutes.
