Simple Dinner Recipes
I have been in a dinner rut lately. I think I just stick to the same meats I know and cook those. I have always loved Chorizo, I mean I am a born and raised Texas girl. So I thought I would write a easy week night dinner that I could add into the rotation.
This recipe is: Paleo, Whole30, gluten free, dairy free, egg free, sheet pan, and thirty minute dinner.
How to Buy Chorizo
If you have never tried chorizo, I challenge you to give it a try. It is a super flavorful pork. Here is the meat I buy at my grocery store. A few things:
Buy mild flavored meat, so that your whole family can enjoy it.
Chorizo can tend to be a pretty cheap cut of meat. So look for quality. The only ingredietns it should have is: pork, vinegar, spices, salt & garlic.
For this to work well on the sheet pan you need chorizo that is in a link like sausage, not ground.
The casing on chorizo is a choking harzard so I just remove it. That way I have no concerns when my kids are eating it. You can see how I do this in the video.
Sweet Potato Hash Sheet Pan Recipe
2 large sweet potatoes
1/2 tsp salt
1 T avocado oil
1 small onion
1 tsp dried rosemary
12 oz chorizo
How to Make it:
Preheat oven 450. Cut the sweet potato into bite sized pieces.
Line a sheet pan with parchiment paper. Put sweet potatoes, oil, and salt on the pan. Put into the oven for 7 minutes.
While potatoes are baking, cut up onions, tomatoes and chorizo.
After the seven minutes is over, take sweet potatoes out of the oven. Turn down the oven to 400 degrees. Add in the rest of the ingredietns to the pan and toss.
Put back into the oven and bake for 20 minutes. Enjoy!
