I have been thinking alot lately just how important an easy, healthy dinner is to me and my family. All to often when it comes time for dinner my (emtional) tank is totally empty. I am tired from caring for these babies, and running this blog / podcast. BUT it is the only time we have together as a family. Some days it ends up being the only time I have sitting face to face talking with my babies. I hate that it is at the end of the day when I am tired, but I love hearing everyone’s summary of the day.

That is when a simple, easy recipe that everyone will love becomes so important. I can make that. I can put some food on a sheet pan and bake it. I may be on empty, but I can do that. Then I get to use the little energy I do have left laughing and talking with my family. That really is why I do these recipes on the blog. I want that for you too. I know God uses that sweet time as a family, and if I get to be a part of that (even through the interwebs) I feel pretty honored by it.

We love changing up our normal week night routine with some fun Japanese spice. I try to keep teriyaki sauce on hand because it is just such a flavorful premade sauce. It is a hit with my kids too, because it is kinda sweet. Everyone’s happy.

If you are paleo or Whole30 this easy recipe for teriyaki sauce will help you stay within the dietary restrications of that diet. If you are gluten free be sure you get or make a sauce that includes coocnut aminos instead of soy sauce.

Sheet Pan Teryaki Meatball Recipe

Ingredients:

  • 1 lb ground chicken

  • 2 T teriyaki sauce, more for topping (I buy)

  • 1 egg

  • 2 T almond flour

  • 1 red bell pepper

  • 1 package of cauliflower rice (I buy)

  • 2 T avocado oil

  • 1/2 tsp salt

  • 8 ounce can chopped pineapple (optional)

How to Make it:

  1. Preheat oven to 400 degrees. LIne a sheet pan (I use) with parchiment paper.

  2. Make your meatballs. Put meat into a bowl with the teriyaki sauce, egg, and flour. Mix well. Form into balls. Put on to one side of the sheet pan.

  3. Chop up the bell pepper. Put on to the other half of the pan with cauliflower rice. Top with avocado oil and salt.

  4. Bake for 20 minutes.

  5. Serve meatballs on top of rice. Top with more teriyaki sauce and pineapple if desired.
